As a high school student, I took a job as a dishwasher in a local German bakery. At the time, it was just a job but not long after, a passion grew, I wanted to become a cake decorator.
After working my way up through the ranks (dishwasher, donut fryer, pastry sheeter, bread moulder), I finally reached mixer (actually mixing the cakes) and then baker. Once I had mastered mixing and baking the cakes, I started to learn to make roses out of butter cream.
In the beginning, after washing the dishes and before heading home in the evening, I would pipe a rose and leave it on the workbench for the chef’s approval in the morning. After several months, I finally received the approval I needed and was allowed to start decorating cakes. Here I found my passion.
After working several years in the small German pastry shop, which is still thriving today, I moved into the bakery industry’s Corporate America, ….grocery store chains. Here I was responsible for 20-30 different stores and the training of their bakers. I enjoyed the opportunity of introducing new cookie designs and products, implementing them chain wide, and participating in photoshoots and marketing campaigns.
Jump ahead to 2001, and I decided to return to the small, family owned bakery businesses. I hopped from one shop to another picking up different tidbits of knowledge and creativity until I found myself coming back full circle and employed at the same small German bakery where I had started and found my passion, however, this time I wore the title, Executive Pastry Chef.
In 2009, I decided to start my own business.
I was enthralled with the little, square petit four because of its limitless opportunities for flavors and decorations and thus Little Corners Petit Fours was born.
In addition to petit fours, I also make and sell custom cakes, brownies, cookies and pastries and I can make most of my products gluten free, dairy free and/or nut free. I offer everything bakery except breads and with my passion still in decorating, I love to make custom cakes.
Little Corners is family owned and operated. I have tried an overwhelming array of flavors and designs - even tiny ”edible images” on a one-inch by one-inch petit four and am always open to new suggestions, so please feel free to send yours my way!
Little Corners can be found at three Loudoun County Farmers Markets: Leesburg, One Loudoun and Cascades. My wife and our three children can occasionally be seen at the market with me and I have enjoyed watching our children grow from box folders to flower makers to budding executive chefs.
